Cocoa nibs have been aged in Alchemy Distillery's Straight Bourbon Whiskey barrels for five months. Once fully aged, the nibs are used to create a 70% Brazil Dark Chocolate bar adding only cocoa butter and cane sugar. Traditional Costa Rican coffee production holds a special intensity and level of rhythmic precision unique to the region. The resulting coffees contain flavors of purely poetic potency, so it's no surprise this lot earned the name El Poeta! This rich cacophony of browned sugar tastes begins and ends with Cafe de Altura de San Ramon – a state-of-the-art mill designed to receive coffee cherries from many small farms and consistently process this well-balanced regional blend.
To maintain this harmonious blend of local coffees, Cafe De Altura de San Ramon engages in high-quality and sustainable production techniques.
Cherries are placed in a large tank with water to remove the less dense and damaged beans that float. Next, the cherries are depulped and pass through a demucilager that mechanically strips the mucilage from the beans. All of this is done with a recycling water system. A series of dryers gently reduce the moisture to 11 percent in a matter of just over 72 hours. Drying coffee in the traditional way can take between six to fourteen days. With every detail of the post harvest operation covered, producers can turn their full attention to farm management practices with a special emphasis on sustainable practices.
Why we chose this coffee: Coffee processing is time intensive and requires a great amount of water. Cafe de Altura De San Ramon’s modernization and efficiency in operations reduces the amount of water required, and shrinks the time and space needed to process coffee. This also allows the producers to focus more of their energy on sustainable practices on their farms. The outcome is a consistent and quality cup that speaks volumes not only about the care invested in the coffee, but in the conservation of our precious resources as well.

Ethiopia Guji Hambela 1 Natural Organic Buku is sourced from METAD Agricultural Development PLC (METAD). METAD is a third generation family owned business with a rich history that began after World War II when the Ethiopian Emperor awarded Muluemebet Emiru, the first African female pilot and family matriarch, with land in the Guji and Sidama zones that has become the Hambela Coffee Estate. METAD is managed by Aman Adinew who returned to Ethiopia after many years working abroad at the executive level for multiple fortune 500 companies because he wanted to make a difference for his family and community. Through Aman’s leadership, METAD has strengthened the local community with employment opportunities including a workforce that is over seventy percent women, education opportunities including sponsorship for a state-of-the-art elementary school with more than four hundred students, and healthcare for employees. METAD was also first to partner with Grounds for Health in Ethiopia to implement a successful cervical cancer screening program for women within the coffee growing communities. METAD provides technical assistance and shares modern farming equipment with other local farmers. METAD also has the first and only private state-of-the-art SCAA certified coffee quality lab on the African continent used to train both domestic and international coffee professionals.

Tasmanian Whisky Cask Aged Story: Winner of the prestigious World Whisky Awards, Sullivans Cove is a rising star in the world of whisky. To'ak's 2019 harvest was aged in an ex-Tawny Port cask that Sullivan's Cove used to age its whisky. Notes of dates and plums are imbued with plush notes of whisky throughout…from Tasmania to Ecuador.
Pairing Recommendations: If you can get your hands on a rare bottle of Sullivans Cove whisky, you have found the perfect pairing. As a backup option, look for a single malt from Speyside, a triple-distilled whisky from Ireland, bourbon, or cognac. Tawny port is another obvious choice. In the realm of cheese, opt for something creamy or nutty—like Brie, triple-cremes, Pyrenees sheep’s milk cheese, and Alpine-style cheeses.

Nicaragua Olomega SHG EP is sourced from family-owned farms organized around Asociacion Aldea Global Jinotega (Aldea Global), an organization operating in the department of Jinotega, Nicaragua. Aldea Global has more than 500 members and forty-seven percent are women, the result of investing revenues in gender equality programs focused on healthcare and small business lending. Olomega coffee is produced by descendants of the indigenous group, Chorotegas, who live in the village of Olomega.

Notes of Honey Nougat, Oak, Whiskey
This chocolate is made with a blend of cacao nibs that are aged in High West Distillery bourbon whiskey barrels for several months. This process provides subtle notes of the charred, white American Oak and light hints of bourbon whiskey. This is by no means a whiskey flavored chocolate, but the flavor of the whiskey is detectable. What really stands out is the "mellowing" effect of the oak whiskey barrel. The chocolate tastes a bit "softer around the edges" and has a pleasant aroma and aftertaste. Due to this unique aging process, this chocolate is extremely limited.
