FARM INFO
The region of Ayarza is a special one, marked by the drastic landscape and cold blue water from the Laguna de Ayarza and Laguna Azul. The lake was formed by two massive volcanos that collapsed and formed a large crater.
For natural-processed coffees under the Blue Ayarza mark, the best cherries from small holders in the region deliver to the mill, often in pickup trucks. Cherries are sent to Amatitilan for drying, and the coffee stays on the patio for 10 days. To finish the coffee is mechanically dried for 5-10 hours.

FARM INFO
This Select Water Process Decaf hails from organic farms in the Chiapas and Oaxaca regions. After selection, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extract the caffeine without extracting the coffee's particular flavor.
