which specializes in honey and natural processes. Sonora is reputed for its quality micro-lots, specific varietal and processing separation, and for leaving a positive impact on the environment and people that surround their business.
coffees grow amongst indigenous trees and other diverse vegetation that provide a great environment for quality and improve the chemistry of soil that’s already naturally rich from volcanic ash. Thanks to the farm’s diverse ecosystem, many different species of birds and animals make their homes on the land.
All of the energy consumed by the farm is harvested there and 100% renewable
, powering the mill and electricity for local workers.
The Honey Natural is a blend of 50% black-honey process and 50% natural process. Using the Honey method saves over three gallons of water per pound of coffee, and the Natural process doesn’t use any water. Black honey process means that those coffee beans were processed with 100 percent of the mucilage still intact.
