All of the partners and friends in the entire Barefoot Coffee circle know that none of us can improve anything in the coffee after it has reached the peak of ripeness. Once all of the complex carbohydrates, amino acid chains and lipids have been ripened by the sun and reached that perfectly sweet and juicy ripeness it is a mad race to preserve that intense flavor and quality. Neither the roaster, the Barista nor the grower can add or improve anything that exceptional care, great terroir and quality varietal has not already created. We are all guardians of this great coffee. It is a wonderful job. It takes a big serving of geeky science, a smidgen of arcane mystery and artistic skill, a barrel-full of craftsmanship and a plethora of passionate, craftspeople willing to do whatever it takes to keep striving for coffee perfection.
