Cup Profile: A lightly fruited coffee that exhibits subtle complexity. Hints of orange zest and sweet melon pair nicely with the tart bite of Granny Smith apple. Notes of cola and sarsaparilla emerge as the cup cools.

Farm Info: The coffee is grown exclusively by small holder farmers who deliver cherries to a private wet mill located in the southern province of Rutana. The farmers cultivate a wide range of plot sizes from 20 trees to up to 2 acres. Cherry is floated; single fermentation for roughly 18 hours; sun drying for 10-14 days depending on weather conditions. Coffee tree varieties are Bourbon, Jackson Bourbon, and Mbirizi.
