
After numerous cuppings, this collection of several different partidas (day’s harvests) were put together to best exemplify the cup profile we have always fallen in love with for this Palo Blanco lot. Green apple sweetness, white peach florals and butterscotch mid-tones create a very well balanced and clean cup. We had a chance to spend a lot of time with Diego and his father Juan during our origin trip and we are excited to share with you these extremely tasty lots.
El Socorro’s success is the result of strict quality control, from the management of the plantation, to the picking and the wet milling. The farm has an efficient ecological wet mill: it de-pulps coffee cherries dry, then transports the coffee and its pulp mechanically and recycles the water in the process. Then, the water is treated with clean production techniques, before allowing it back into the forest.
